Ingredients:

  • COOKIE DOUGH:
  • 3 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tsp. baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup coconut oil
  • 1/4 cup Oikos 0% plain Greek yogurt
  • 1/2 cup marmalade
  • 2 tbsp freshly grated ginger
  • 1 tsp. ginger powder
  • Zest of one orange
  • 1 egg
  • ICING:
  • 1/4 cup Oikos 0% plain Greek yogurt
  • 1 1/2 cups powdered sugar

Preparation steps

  • COOKIE DOUGH: In a large bowl, sift all the dry ingredients to obtain a well-distributed mixture with no lumps.

  • In another bowl, mix all the wet ingredients.

  • After obtaining a homogeneous mixture, incorporate the wet ingredients into the dry ingredients and mix well.

  • On a flat surface, roll out the cookie dough, and using a cookie cutter of your choice, shape your cookies.

  • In a baking sheet, place parchment paper, place your cookies and bake at 205°C (400°F). for 8 minutes.

  • When the cookies are cooled, dip them one by one in your Oikos 0% icing and then let them rest on a cooling rack on a sub tray for any excess icing that may leak out.

  • Sprinkle with small candies of your choice to decorate your cookies.

  • ICING: In a bowl, simply add the 2 ingredients and mix well with a whisk.
