Ingredients:
- 2 cups of 11% Plain Oikos yogurt
- 1/2 a cucumber
- ¼ cup red onion, diced
- 1/2 tsp salt
- 1/8 cup finely diced cilantro
- 1 green chili, finely diced (can use more than 1 chili for added spice)
- ¼ tsp chaat masala (optional)
- 2-3 fresh mint leaves, finely chopped, for garnish
Preparation steps

Peel the cucumber and then grate it to obtain 1/2 cup of cucumber.

Dice the onion to ¼ inch pieces and finely chop the cilantro and mint leaves.

If using green chili(es), cut the chili(es) in half lengthwise and scrape out the seeds. Then, finely dice chili(es) into small pieces.

In a medium bowl, whisk together yogurt, grated cucumber, red onions, salt, chillies and cilantro. Mix together until well combined.

Add in chaat masala. You can add additional salt and/or chaat masala to taste.

Garnish using additional mint leaves, chopped cilantro, and onion.

Note: For a runnier texture, add in water or milk 1 tsp at a time until the raita reaches your desired consistency.

Note: Raita is best consumed within a few hours of making it. If making in advance, prep all the vegetables and garnishes and whisk together immediately before serving.
