Ingredients:

  • Fried chicken
  • 2 chicken breasts
  • 1/2 cup buttermilk
  • 1/2 cup Oîkos 0% plain Greek yogurt
  • 2 tbsp. Frank's Red Hot style sauce
  • Salt and pepper
  • 2 cups of flour
  • 2 tbsp. smoked paprika
  • 2 tbsp. chili powder
  • 2 tbsp. garlic powder
  • 2 tbsp. salt
  • Peanut oil in enough quantity

Preparation steps

  • Cut breasts into fillets.

  • Place fillets in a freezer bag with buttermilk, yogurt, hot sauce, salt and pepper. Marinate in the refrigerator for at least 1 hour or up to 3 hours.

  • Sift flour, paprika, chili powder, garlic powder, salt and pepper into a large mixing bowl.

  • Prepare the sauce. In a bowl, combine yogurt, garlic, parsley, hot sauce, salt and pepper. Cover and set aside in the refrigerator.

  • In a saucepan, add oil to a height of approximately 4 cm (enough to cover the chicken fillets.) Heat oil over medium heat for at least 10 minutes.

    *If you have a cooking thermometer, bring the oil to 350°F.

  • Prepare a baking sheet with a wire rack (or several layers of paper towels) to remove excess oil once the chicken is cooked.

  • Once the oil is hot, place the marinated chicken in the flour mixture in 3 batches (so as not to overload the pot with oil). Using tongs, cover fillets with breading and strain to remove excess flour mixture. Cook in hot oil.
